Data components were not the last change: Java 1.21.5 moved the text that carries item names and lore to SNBT, and reshaped the enchantments component. Pick the version you are building for and the generator writes that release’s own syntax, including the older item NBT form used before data components. Version decides content as well as syntax — an item or mob only exists from the release that added it.
Bedrock 1.26.40 has no data components: /give takes only item, count and data value, so anything beyond that needs a follow-up command or is not expressible at all. The generator's Bedrock mode emits the working sequence and says honestly when a field is impossible:
