Java Edition generates exactly 128 Strongholds arranged in 8 concentric rings around the world origin (0,0). The innermost ring holds 3 Strongholds about 1,280 blocks out, and outer rings hold progressively more. In Bedrock Edition they generate more randomly, often beneath villages, with no fixed 128 limit.
Strongholds are underground stone-brick structures (including mossy, cracked, and infested variants) with libraries, prison cells, and fountains, and they always contain the End Portal room with a silverfish spawner and a 12-frame portal that may already have some Eyes of Ender. Chests hold loot like Ender Pearls, diamonds, iron and gold ingots, redstone, books, and golden apples (including enchanted golden apples), while library bookshelves let you collect plenty of books.
