An untamed cat sprints away from any player within 7 blocks and actively avoids players within 16. Hold raw fish, though, and it reverses: the cat slowly walks toward you from up to 10 blocks away. Break that spell — turn your camera too quickly, or stop holding the fish while it is within 6 blocks — and it bolts and ignores you for a few seconds.

Do not chase it and do not swing the mouse. Put the fish in your hand, stand still, and wait for it to arrive — then feed. Chasing a cat is the single most common reason a taming attempt fails, because every step you take toward it triggers the flee behaviour you are trying to switch off.

Villages do not hand out cats for free either — they spawn against a bed quota, and the two editions count it differently. This is the sort of detail that decides whether the village you just walked into has any cats at all.

No amount of village hunting will produce it, because the variant is not in the village pool at all. It is the one cat in Minecraft with a guaranteed address.
"Black" and "Tuxedo" are two different cats
The mostly-black cat with white markings and green eyes that turns up in villages is the Tuxedo variant — and confusingly, its id in the game's own data is just "black". The solid-black cat with orange eyes is the Black variant, whose id is "all_black", and that is the swamp hut one. Any guide promising you a black cat out of a village is describing a Tuxedo.
Two practical warnings before you go. The hut's witch will throw potions at you the moment she notices, so clear her out before you start feeding fish — a splash potion landing on a cat you are three fish into is a bad afternoon. And the hut stands over water in a Swamp, so bring a boat and something to stand on.

Because the roll is random and the village ceiling is low, collecting variants means visiting a lot of villages rather than farming one. Breeding does not help you fill gaps either: a kitten takes the appearance of one of its parents, so two Tabbies will never give you a Jellie.
Can You Tame an Ocelot in Minecraft?
No. An Ocelot cannot be tamed in any current version of Minecraft — the tameable ocelot was removed in Java snapshot 18w44a, on the way to 1.14, and replaced by the cat as a separate mob. That last row is a real edition difference worth knowing before you travel: on Java, a Bamboo Jungle or a Sparse Jungle will never spawn an ocelot, so a Java player needs a proper Jungle and should aim the Jungle Finder at their seed. Two things that are genuinely worth the fish: it keeps creepers and phantoms at arm's length, and it pays rent. A Creeper keeps 6 blocks away from a cat even while chasing you, and a Phantom keeps 16 — in both editions. On Java a cat will also hiss at a phantom that is hunting you, which is a free warning that one is inbound.
The rent is the gift mechanic. Sleep through the night with a tamed cat nearby and there is a 70% chance it leaves you something next to the bed when you wake. You get nothing if you slept through a daytime thunderstorm, and nothing from a cat you told to sit. On Java every cat rolls its own 70%; on Bedrock only one cat can give a gift, so a room full of cats is a Java-only income stream.
